Yay!
I've started a new tradition where I make truffles around Christmas time. I've done it for two years now!
These aren't your normal truffles, they're actually super easy to make and really yummy!
This one is:
1 package of mint cookies. (Use any kind you want, I used Keeblers Grasshopper mint cookies.)
About 6 ounces of cream cheese (full fat or none fat) (If you have a larger package of cookies, use 8 ounces.)
It's dipped in chocolate almond bark. (I used a little less than half a package for these.)
Crushed candycanes on top 
Crush cookies into a fine powder. (use a food processor!)
Make sure the cream cheese is easy to stir around, you can either let it set out a while or microwave it a bit.
Stir cookie powder with the cream cheese until it's mixed well.
Form little balls with your hands and put it onto a cookie sheet (I line mine with wax paper)
For easier decorating, put them in the freezer for a little while so they aren't as sticky.
Melt some of the almond bark in a bowl, then dip the truffles into the chocolate. I use two forks to cover them and then put them back onto the same spot they were on the cookie sheet.
The almond bark tends to harden pretty fast, so if you're putting sprinkles or anything like that on them, you should do so right after each truffle is dipped.
So yup... that's it. lol. So very easy and yummy!!!
